Sitting near the pool with a cocktail in hand, you might expect to be looking out on the Pacific Ocean. But at Theo’s Rooftop Bar, you’ll be watching the sun set over the Blue Mountains instead.
With its open-air dining and panoramic views, Theo’s, on top of the Astina Suites, offers a Mediterranean vibe a long way from the coast; it gave Penrith something highly original when it opened its doors in late 2021.
The bar is popular for after-work drinks, and serves lunch, dinner and snacks, with a menu that includes the likes of 24-month aged prosciutto to graze on; small plates of arancini with wild mushroom, pecorino and aioli; and mains including house-made pasta.
There’s a wide selection of cocktails, lots of wines available by the glass, and a range of non-alcoholic cocktails and spirits, too.
It’s open Wednesday to Sunday, and has a smart-casual dress code after 6pm. Don’t bring your swimmers unless you’re staying at the Astina; the pool is for hotel guests only.
