The icon of The Guildford Hotel is the on-site smoker, named Thomas, who is manned by the Pitmaster, Chris Lee. Their meats are smoked low and slow at 75 degrees Celsius to let the flavour develop, resulting in tender and juicy meat which are topped with their homemade rubs and bastes, giving you that classic Guildford flavour.
