Head Chef and his team have kept the concept simple: honest and rustic food with a modern touch. Walk past Ollie’s in the afternoon and you’ll see pasta of all shapes and sizes pizza dough fermenting with fresh yeast, and the smell of charcoaled steak wafting through the restaurant.
Ollie’s menu highlights the freshest Far North Queensland produce including vegetables and seafood as well as the quality seasonal ingredients that bring bright and refreshing flavours to the table.
A main hero of Ollie’s Italian is its unique charcoal oven (Josper) that is used to cook all their meats and seafood. The very first of its kind in Cairns the Josper originates from Spain and has been around for 80 years producing high-quality charcoal-fired char grilled ovens. Using no electricity or gas, the charcoal heats the heavy steel oven up to 500 degrees Celsius.
