Sitting at street level in a Potts Point terrace, the compact Chester White Cured Diner is all about meat. As the name suggests, cured meats like prosciutto, salami, bresaola and pastrami are the stars of the menu, served on a heaving platter with pickled vegetables, cheeses, olives and crackers. For something more substantial, you can’t go past the truffle cacio e pepe, prepared in a giant wheel of pecorino.
The short wine list is made up of mostly Italian bottles, with a few New World varietals thrown in for good measure, and the expert staff can help you match something to your meal. Nab one of the stools at the white tiled bar to watch the bartenders at work or join the crowds at the small tables spilling out onto the footpath.
