Swagman Country Dining brings you an authentic taste of Australia with sumptuous, regionally sourced meats and vegetables infused with unique and beautiful flavours of Australian bush herbs and spices, most of which are grown on the property.
Their concept is proudly brought to you by the vision of Sandy Retallick, who was inspired to use native bush flavours to enhance meals for the uniqueness of the flavours.
The Retallick family have dedicated the last two decades to rewilding much of their 600 acres of land and preserving native species of both fauna and flora. Chef Di and Chef Yulius work passionately with Sandy to bring this vision to fruition by developing irresistible flavours for Swagman. In addition, their excellent front-of-house and kitchen staff are also essential in getting you delectable flavours and a memorable experience.
